Study on irradiation degradation and antioxidant activity of Astragalus polysaccharide
“In the field of food science, researchers extracted two groups of high molecular weight Astragalus polysaccharides from Astragalus membranaceus and studied the effects of gamma ray irradiation on their molecular weight, structure, and antioxidant activity. The results showed that the molecular weight of Astragalus polysaccharides decreased and the antioxidant activity increased after irradiation.”
