The Ficus carica polysaccharides (FCPS) were degraded with 60Co γ-ray irradiation. We adopted the high performance gel chromatography (HPGC) to determine molecular weight, and ultraviolet (UV) together with infrared spectrum (IR) to analyze the structure of FCPS in order to investigate the influence of FCPS concentration, irradiation dosage and H2O2 concentration in the process of degradation, and compared the influence of different irradiation treatment on its antioxidant activity. The results show that the irradiation dosage and H2O2 concentration can facilitate the degradation of FCPS while FCPS concentration has inhibitory effect on its degradation. After irradiation the carbonyl of FCPS absorption peak is enhanced, and the activity of FCPS on scavenging superoxide anion and scavenging hydroxyl radicals, as well as the reducibility has been significantly improved than those of the untreated.Cited
