NaCl是咸肉、火腿、香肠等食品的添加剂. 脉冲辐解研究表明, 在含Cl,-,溶液中能检测到Cl,2,-,. Cl,2,-,是一个活泼粒子, 因此NaCl在上述这类食品的辐照工艺中应该受到注意. 本工作分别用,36,Cl放射性示踪法和氯离子选择电极法研究了,60,Co γ射线照射下NaCl-酯--H,2,O模式体的辐射化学. 两种方法都证明, 体系中确实生成了有机氯化物. 实验结果表明, 有机氯化物可能是在水与酯的界面形成的. 有机氯化物G值的大小受体系混和情况的影响.
Sodium chloride is a common additive of food such as salt meat, ham, sausage. In. this paper radiation chemistry of stearic acid-NaCl-H,2,O and oleic acid-NaCl-H,2,O model systems have been developed by ,36,Cl radioactive tracer method and Cl,-, ion selective electrode method. Both methods verify the existence of organic chloride compounds in the system irradiated under ,60,Co γ -ray.
